1 C firmly packed brown sugar
1/4 C canola oil
1 large egg
2 large egg whites
3 oz. semi sweet or bittersweet melted and cooled
1/2 C beet puree
1/2 C low fat buttermilk
1 tsp. vanilla
2 C. flour
1 tsp. baking soda
1/4 tsp salt
1/2 C grated carrots
1/2 C. grated zucchini

Preheat oven to 350. Spray a 9 inch pan with cooking spray In a large mixing bowl, beat the brown sugar with the oil until creamy. Add the egg and egg whites one at a time, beating after each addition. Beat in the melted chocolate, beet puree, buttermilk, and vanilla. Add remaining ingredients and beat until smooth. Pour into pan and bake for 35-40 minutes or until toothpick comes out clean.
