1 large chuck roast (best flavor and less expensive cut of meat)
1 large white or yellow onion, sliced
Salt and pepper to taste
Garlic powder to taste
Paprika to taste

Taco makings:
Tortillas
Salsa
Fresh cilantro
Sour cream
Shredded cabbage
Grated cheese
Sliced avocados or guacamole
Lime wedges

Directions:
Directions:
Preheat oven to 450º. Spray roasting pan with oil. Place roast in pan, sprinkle with seasonings and layer with onion slices. Roast with no lid for 20 minutes per side. Add 1/2 cup water, cover pan with lid and reduce heat to 300º. Cook until easily shredded with a fork - at least 90 minutes. When done, allow roast to cool enough to fork shred. Return shredded meat to pan, along with juices and return to oven to re-heat. Serve with taco makings.
