1/2 cup plus 1 tablespoon sugar
1 envelope unflavored gelatin
3 tablespoons cornstarch
1/4 teaspoon salt
1 small package (3 ounces) cream cheese, softened
6 tablespoons sour cream
1-3/4 cups milk
2 eggs, separated
1 cup unsalted macadamias, chopped
1 teaspoon vanilla
Baked 9 inch pie shell (not frozen, they aren't deep enough)

Directions:
Directions:
Combine sugar, gelatin, cornstarch, salt, cream cheese and sour cream in a blender or food processor and whirl, gradually adding milk, until mixture is smooth. Pour into the top of a double boiler and cook over gently boiling water, stirring frequently until very thick and smooth and about the consistency of a thick cream sauce, about 10 to 15 minutes. In a small bowl, beat egg yolks. Blend some of the hot liquid with the egg yolks, then return to sauce. Cook, stirring about 2 minutes more. Remove pan from heat and take top of pan out of the hot water.

Whip egg whites until they hold short, distinct stiff peaks, then fold the warm sauce into them. Chill until mixture is cool but not set. Whip heavy cream until stiff and fold the cream, vanilla and 1/2 cup of the macadamia nuts into the cooked mixture. Pour this filling into the baked shell; do not smooth top. Chill for 2 to 3 hours, then sprinkle remaining nuts over the surface of the pie and serve.
