4 to 5 pounds fresh broccoli, cut into large florets
5 tablespoons olive oil
1 lemon, zested and juiced
3 tablespoons pine nuts, toasted
4 garlic cloves, peeled and sliced
1-1/2 teaspoons kosher salt
1/2 teaspoon black pepper, freshly ground

Optional:
1/3 cup freshly grated parmesan cheese

Preheat oven to 425º. Wash and thoroughly dry broccoli. In a large bowl, toss broccoli with olive oil, salt, pepper and garlic. Line a baking sheet with aluminum foil. Spread broccoli mixture evenly on pan. Roast for 20 to 25 minutes, shaking the pan once or twice during baking. Meanwhile, place pine nuts in a small frying pan and cook over low het, stirring often, until golden brown, being careful to not overcook. Zest and juice the lemon. When broccoli is finished roasting, sprinkle with pine nuts, lemon zest and lemon juice. Can be served with freshly grated parmesan cheese.
