2 cup Rolled Oats
2 cup Quick Oats (or use more Rolled Oats)
1/3 cup Ground Flax
1 15 oz. can Pumpkin Puree
2 tsp Vanilla Extract
3-4 tbsp Maple Syrup
2 cup Brewed Coffee (or Herbal Coffee, see notes)
1 cup Plant Based Milk
1 tbsp Pumpkin Pie Spice
Juice of half a Lemon
Additional Toppings of Choice

1. Combine all ingredients in a large bowl and stir well until everything is evenly incorporated. Keep in mind that this mixture will thicken as it sits, so it may be a bit runny at first.
2. Portion out the oatmeal into bowls, tupperware, or old mason jars, and store in the fridge until ready to eat, for up to 7 days.
3. Don't forget the toppings! I recommend Blueberries, Pumpkin Seeds, and Coconut Chips or Cacao Nibs.

You can use either brewed Coffee or Herbal Coffee for this recipe (I used Teecino). If you choose to use herbal coffee, I would suggest you brew 3 tea bags in 2 cups of water, as it is not as potent.

Ground Flax Seeds may be substituted for Chia Seeds.

If you'd like to omit the Plant Based Milk and only use Coffee, go for it. It will make the Coffee taste stronger, but the final product will not be as creamy.
