½ c Italian bread crumbs
¼ c grated parmesan cheese
4 chicken breast, boneless, skinless
1 large egg
¼ c vegetable oil
15½ ounces spaghetti sauce, Prego or Ragu
1 c mozzarella cheese, shredded

Directions:
Directions:
Preheat oven 400º.

Combine bread crumbs and parmesan cheese in bowl.

Flatten chicken breasts with flat side of a large knife or mallet to ½ inch thick.

Crack eggs and 2 T of water in a second bowl, beat slightly to combine.

Dip chicken in beaten egg then in bread crumbs.

In large skillet, heat oil. Brown chicken, about 5 minutes. Turn and brown other side, about 5 minutes. Remove chicken from skillet and drain on paper towels.

Place chicken in 2 quart shallow baking dish. Top with spaghetti sauce. Sprinkle with mozzarella cheese.
Bake for 20 minutes or until done.

Aunt Bevie says " I have made it, and Aunt Ellen is right this is a favorite. Couple of tips, if chicken breasts are large, split in half lengthwise. Also, if you have pepperoni, add these, after adding the cheese. This also makes great chicken parm subs!
