3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1 teaspoon pepper
2 cups (any kind) milk
1 cup (4 ounces) shredded sharp cheddar cheese
1 big squeeze of yellow mustard
5 cloves garlic, minced
1 tbsp fresh thyme, chopped

5 cups thinly sliced peeled potatoes (about 6 medium)
1/2 cup chopped onion

Preheat oven to 350°.

In a 4 cup measuring cup, melt butter in the microwave, approximately 1 minute. Stir in flour, salt and pepper until smooth. Put back in microwave for another minute to cook the flour. Gradually add milk. Back in the microwave for 2 minutes or until starting to thicken. Stir with a whisk. Microwave for another minute or so until bubbling. Remove and stir in cheese, mustard, garlic and thyme. Cook and stir 2 minutes or until thickened.

Slice potatoes thinly and lay in a baking dish. Top with onion. Pour cheese sauce over potatoes and onions. Cover and bake 1 hour. Uncover; bake 30-40 minutes or until the potatoes are tender. Yield: 6-8 servings.
