10 roma tomatoes - seeds removed, diced small
1 medium red onion - diced small
1 red pepper - diced small
1 yellow pepper - diced small
1~2 jalapeños - minced (use seeds to add heat)
1 bunch of fresh cilantro - chopped
2 cloves of garlic - minced
1 Tbsp kosher salt
1½ cups frozen sweet baby corn
2 tsp cumin - to taste
2 fresh squeezed limes
