2 cups sugar
3/4 cup veg. oil
3/4 cup cocoa
4 eggs
2 tsp. vanilla
2 1/3 flour
2 tsp. baking powder
1/2 tsp. salt
Powdered sugar

Directions:
Directions:
Blend sugar, veg. oil, and cocoa.
Beat in eggs well.
Add vanilla, flour, baking powder & salt.
Cover and chill over night.
Make into 1 1/2 inch balls and roll in powdered sugar.
Bake at 350 for 7 and 12 minutes.
They should be a little gooey in the middle.

This recipe comes from Olive Balfour,a neighbor of Dad's growing up in Pioneer Stake. Her husband sent dad on his mission. He was his bishop for a really long time. He really loved the Balfour's as well as Grandma and Grandpa. They were great friends. Also I am pretty sure Grandpa was one of his counselors or clerk. This is a delicious fudgy chocolate cookie. One of my favorites!
