2 cups butter, softened
2 cups sugar
9 whole eggs
4 cups flour
1 pinch salt
lemon peel, grated
nutmeg, grated
1/2 cup Brandy

Directions:
Directions:
Preheat oven to 350º. Grease two loaf pans (or you may use one larger one).

Mix the butter and sugar together. Beat in the eggs. Sift the flour and salt together and mix into the butter mixture until thoroughly blended. Add the lemon peel, nutmeg, and brandy, and mix well. Pour into the loaf pans, and bake for about one hour.

As the war progressed and many items became scarce, cakes were often only made for holidays and special occasions. This 'extravagant' pound cake recipe, using 9 eggs and brandy, was typically made only in more affluent homes.
