40 cloves of garlic, about 3 bulbs
2 whole chickens, cut up
kosher salt
freshly ground black pepper
1 T unsalted butter
2 T EVOO
3 T cognac, divided
1½ c dry white wine
1 T fresh thyme leaves
2 T all-purpose flour
2 T heavy cream

Directions:
Directions:
Separate the cloves of garlic and drop them into a pot of boiling water for 60 seconds. Drain and peel the skin off the garlic. Set aside.

Dry the chicken with a paper towel. Season liberally with salt and pepper. Heat the butter and olive oil in a large pot or dutch oven, over medium high heat. In batches, saute the chicken in the fat, skin side down first, until nicely browned, about 3-5 minutes per side. Turn with tongs, being careful to not pierce the skin of the chicken. If the fat is burning, turn the heat down to medium. When a batch is done, remove to platter and continue to saute all of the chicken.

Remove the last pieces of chicken to the platter, and add all of the garlic to the pot. Lower the heat and saute for 5 - 10 minutes, turning often, until evenly browned. Add 2 T cognac and the wine, return to a boil, scrape the brown bits from the bottom of the pan.

Return the chicken to the pot, with any juices that have collected on the platter. Sprinkle thyme leaves over chicken. Cover and simmer over low heat for about 30 minutes, until chicken is done.
