½ cup flour
2 large eggs
3 cups macadamia nuts (very finely chopped or ground)
6 - 6 ounce mahi mahi fillets
4 Tbsp olive oil

Directions:
Directions:
Preheat oven to 350º. Place flour in a shallow bowl. Whisk eggs in a small bowl. Place nuts in another shallow bowl. Sprinkle fish with salt and pepper. Coat fish with flour. Dip fish into eggs, then nuts, coating completely. Heat 2 Tbsp oil on medium heat. Brown fish (about 2 minutes per side), and transfer to oiled baking sheet. Bake for 6-7 minutes.
