Stuffed Zucchini Recipe

Zucchini about 4-5 medium size
1 Cup bread crumbs
2 eggs
1 Cup Parmesan cheese

Preheat oven to 350 º
In a frying pan fill about 1/2 way full of water.
Cut zucchini in have lengthwise and then cut the lengths in 1/3 or smaller if you like.
Place zucchini pieces seed side down in the frying pan. Bring to a boil and simmer about 10 minutes until tender.
Drain zucchini and cool so that you can scoop out the centers.
Mix the eggs bread crumbs and chees in a medium size bowl add salt and pepper
Add the zucchini centers and stir until well blended. Add a little more bread crumbs or cheese if too moist. the filling should be like a paste.
Arrange the zucchini shells on a foil lined baking sheet. Fill the centers with the mixture.
Spray lightly with olive oil.
Bake 25-30 minutes until lightly browned.
