8 slices white sandwich bread
(should be soft & buttery, not dry)
8 Tbsp foie gras mousse, at room temperature
(Vincenzo's has a good foie gras paté that I use)
Coarse sea salt
4 Tbsp berry jam
(preferably tart berries...I use seedless raspberry...blackberry or currant would also be good)

Directions:

Lay the slice of bread on the counter.
Spread fois gras mousse on 4 of the slices.
Sprinkle with course salt.
Spread jam on the other 4 slices of bread. Join the jam slices with the foie gras slices to make 4 sandwiches.
Using a serrated/bread knife, cut off the crusts with gentle sawing motions, then cut the sandwiches diagonally into quarters so you end up with triangles.

Place on a platter to serve.

When these sandwiches are served they look like peanut butter & jam....only it's peanut butter & jam for grown ups!

I like to serve these on a platter surrounding chocolate-dipped strawberries! Total decadence.

Another note -- these seem to be more popular with the ladies of a group sooner than the men.
Don't know why...just sayin'.
