4 lbs. fresh ripe tomatoes, trimmed & cut into chunks
1/4 cup extra virgin olive oil
1/4 cup rice wine vinegar
1 cup cucumbers, peeled, seeded & diced
1 cloves of garlic, peeled & trimmed
1 red sweet pepper, seeded, deveined & cut into chunks
1 Tbsp Kosher salt
1/2 cup fresh basil leaves, cut into ribbons (for garnish
Freshly ground black pepper

Directions:

Place all ingredients in the bowl of a food processor.
Process until smooth and refrigerate.

Serve garnished with chopped basil and freshly ground black pepper.

This recipe come from Tosca Reno's Eat-Clean book. This is a really good Gazpacho...it is one of the best I've tried.

You can also garnish the soup with diced cucumber & red pepper and add a dollop of plain yogurt.








QUIP:

Knowledge is knowing a tomato is a fruit.
Wisdom is not putting it in a fruit salad.

VICIOUS LITTLE SAVAGES

My Uncle Jer (Jerome) has a wonderful imagination. He used to plan most of our games. He would take control of us so our parents could visit with Gramma & Grandpa Sherrer.
I distinctly remember playing “WAR” back in the swamp/marsh or whatever it was. There would be 2 teams and we’d plan strategies and try to take over each other's territories.
Now, if you got caught by the other team, and became a Prisoner of War the punishment was that they got to hit you over the head with a green apple stuck on the end of a stick until the apple broke and you WERE NOT allowed to cry.
I’m not really sure why we wanted to play this. We were scared to death but heaven forbid if we weren’t included to play.
This game was one of those that we “couldn’t tell our parents” about.
