1 tbs butter
1 medium onion chopped
2 tbs curry powder
1 cup dry red lentils (rinsed)
1/4 cup rice
6 cups water
1 tsp cinnamon
1 large can diced tomatoes (drained)
1 tsp salt
1/2 cup milk or cream (or coconut milk)
1-2 cups chopped cooked chicken (optional)

Directions:
Directions:
In large pot, cook onion in butter for about 3 minutes.
Add curry powder, lentils, rice and water and bring to a boil.
Add cinnamon.
Reduce to medium-low and simmer, partially covered for about 30 minutes.
Add the tomatoes, salt, milk and chicken (if adding) and simmer gently for 5 minutes.

Serve wth a dollop of sour cream.

I got this recipe from City Line and it is one of my favourite. It's flavourful without being too spicy. I decided to add the chicken to make it a complete supper option.
