3 1/2 - 4 lbs. roma tomatoes
1/2 cup extra-virgin olive oil
Kosher salt & freshly ground black pepper, to taste
2 cloves garlic, minced
1/2 tsp dried oregano (or 1 Tbsp fresh oregano, minced)

1 lb. spaghetti
1/2 cup freshly grated Parmigiana-Reggiano

Preheat oven to 300º F.

Cut tomatoes into large chunks; place in a large bowl. Toss with oil; season with salt & pepper. Stir in garlic and oregano, toss well; adjust seasoning. Spread mixture on lightly oiled baking sheet. Bake 15 - 20 minutes until tomatoes have softened and have a somewhat shrivelled texture.

Meanwhile, cook spaghetti according to package directions. Drain and place in warm serving bowl; add tomatoes and toss to combine. Add a little more olive oil, if needed, and serve with a generous sprinkle of cheese.

In late summer when tomatoes are plentiful and inexpensive, this is the recipe to go to. There is a wonderful "fresh tomato" taste here that you just can't get with canned tomatoes.

Quick and easy to make. It's wonderful served along side any grilled meat.
