2-2½ pounds beef or lamb, cubed
3 apricots or 3 Tbsp of chutney
weak herb tea
2 gloves of garlic, crushed
4 onions
1 Tbsp oil or butter
1 cup hot water
1 Tbsp curry powder
1 Tbsp sugar
1 Tbsp all purpose flour
1 Tbsp vinegar or lemon juice
salt and pepper

Directions:
Directions:
1. If using apricots, wash them in the herb tea.

2. Fry onions until light brown. Add the meat, apricots and the garlic.

3. Add the hot water, cover and cook for 1½-2 hours until meat is soft/tender.

4. Mix the curry powder, sugar, all purpose flour, lemon juice, salt and pepper. Add this to the stew, 30 minutes before serving.

5. Serve with rice and chutney.
