Glass noodles-yam noodles, big bag (860 gram)
2 tsp sesame oil
1 Tbsp canola oil
1 carrot, shredded
1 red pepper cut in strips
2 cloves garlic minced.
1 medium Onion sliced thinly
6-8 fresh shiitake mushrooms, sliced
1/2 lb fresh spinach
3 green onions cut diagonally slices
2 Tbsp of sesame seeds

Jap Chae sauce:
3 Tbsp of soy sauce
1 T dark soy sauce
2 tsp of sugar
1 tsp of sesame oil
1 Tbsp oyster sauce

1. Cook the noodles in boiling water for 10 minutes or little more. Noodles should be firm but cooked.

2. Drain with cold water until well drained. Cut noodles in halves with scissor. In big bowl mix with 2-3 T of sesame oil.

3. Cook garlic, onion slices in oiled frying pan, cook for 2 minutes. Add slices of shiitake mushrooms, red pepper slices, carrots strips and cook for 3-4 minutes. Add spinach and cooked for 1 minute.

4. Mix the noodles, sauce, vegetables and 1 tsp each of salt and pepper.

5. Top the mixture with green onions and sesame seeds.

Serve it cold or hot. Most people like it cold.
