1/2 TSP SALT
3 LARGE EGG YOLKS BEATEN
1/2 CUP LUKEWARM WATER

COMBINE FLOUR AND SALT. STIR IN EGG YOLKS AND WATER; MIX WELL. KNEAD ON FLOURED SURFACE UNTIL SMOOTH AND ELASTIC, ABOUT 5 MINUTES. LET DOUGH REST 30 MINUTES. ROLL OUT TO 18 INCH SQUARE. LET DRY 1 HOUR. ROLL UP LOOSELY LIKE A JELLY ROLL. CUT DOUGH INTO 1/4 INCH STRIPS LAY OUT FLAT TO DRY AGAIN FOR ABOUT AN HOUR
