1/2 CUP SHORTENING
1 CUP SUGAR
1 TSP SALT
1 TSP SODA
1 TSP VANILLA
2 LARGE EGGS
2 CUPS FLOUR
1 TSP BAKING POWDER
2 TBSP SOUR MILK
2 CUP PEELED AND DICED APPLES

NOTE: TO MAKE SOUR MILK QUICK
1 CUP OF MILK TO 1 TSP LEMON JUICE OR 1 TSP VINEGAR LET SET TILL CURDLES.

PREP THE SOUR MILK AND SET ASIDE.

CREAM THE SHORTENING AND SUGAR UNTIL FLUFFY. ADD EGGS. BEAT WELL. COMBINE FLOUR, SALT, SODA AND BAKING POWDER. ADD THE CREAMED MIXTURE, BLENDING WELL.
STIR IN VANILLA, MILK AND APPLES. SPOON BATTER INTO GREASED LOAF PAN. BAKE AT 350 FOR 1 HOUR.
