1 cooked chicken - fried, simmered or canned
1 - 2 c. Pace salsa
14 flour tortillas
1 - 1½ lb grated cheddar/jack cheese
¼ C. green onion or chives (chopped)
1 large can ripe olives (sliced)
1 can La Victoria green chile enchilada sauce

Directions:
Directions:
Heat oven to 350º
Break up chicken in bite size pieces. Pour a small amount of enchilada sauce into the bottom of a large baking dish I lightly brown the flour tortillas in oild on both sides. .

Add salsa to chicken.

Fill tortillas with:
1 - meat mixture
2 - grated cheese
3 - chopped green onion or chives
4 - sliced ripe olives

Roll up and place seam side down in baking dish. Pour enchilada sauce over enchiladas and sprinkle sliced olives down the center,

Sprinkle the top with parsley and paprika.

Bake for 20 - 25 minutes
