12 slices bread,toasted, crusts removed
12-18 slices turkey or chicken - cooked
⅓ cup butter
⅓ cup flour
3 cups milk
1 tea. salt
3 eggs yolks beaten
½ cup grated parmesan or cheddar cheese
1 Tbsp. butter
12 slices of bacon cooked and drained
6 slices tomatoes

Directions:

Place 6 sliced of toasted bread in a baking dish and top with meat. In saucepan melt ⅓ cup butter and blend in flour, add milk and salt. Stir until thick and smooth. Add egg yolks, cheese and butter. Pour half cup sauce over each sandwich. Put tomato on each and cross bacon over each. Cut remaining toast diagonally and place on the sides and edge of dish. Sprinkle parmesan cheese over all and put under broiler until brown.

Can be made in individual dishes.
