1 cp. unsweetened applesauce
1/2 cp. white sugar
1/2 cp. packed light brown sugar
2 eggs
1/4 cp. canola oil
1 tsp. vanilla
2 cps. plain flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1 cp. peeled, cored and finely chopped apple

Directions:

Preheat oven to 350. Spray loaf pan with cooking spray. Combine first 6 ingredients. Mix in dry ingredients, stirring just until combined. Add apples and pour into loaf pan. Bake for 60 min. Allow to cool before removing from pan. Sprinkle with powdered sugar or top with Caramel Glaze (see recipe).
