1 pint of cherry tomatoes, preferably heirloom, rinsed and stemmed
extra virgin olive oil
kosher salt
red pepper flakes
small log of goat cheese (3 to 5 ounces)
6 basil leaves (or so)
toasted baguette slices or crackers

Directions:
Directions:
Preheat oven to 250º. Slice each tomato in half and put in a bowl. Drizzle with olive oil to coat (about 2 Tbsp) then sprinkle with salt and a pinch or two of red pepper flakes. Toss well. Spread tomatoes on a parchment or foil lined baking sheet. Bake until soft and slightly caramelized, 1½ to 2 hours, checking once or twice to toss and to make sure tomatoes are not burning.

While tomatoes are still warm (or at room temperature if you want to make this ahead), crumble goat cheese onto a serving platter in a small mound. Drizzle with olive oil, then spoon the tomatoes over the cheese. Tear or chiffonade the basil and scatter over the tomatoes. Serve with baguette slices or crackers.
