2 (10 oz) packages frozen broccoli, chopped
1 Rotisserie chicken (or 3-4 cooked chicken breasts), chopped or shredded
1 can condensed cream mushroom soup
1 can golden mushroom soup
1½ cups sour cream
1 cup portabello mushrooms, chopped
2 cups sharp cheddar cheese, grated
1½ tsp. curry powder
½ cup dry white wine
½ cup Parmesan cheese, freshly grated
1 cup Italian breadcrumbs
3 T. butter, melted
salt and pepper

Preheat oven to 350°F.

Thaw frozen broccoli in the microwave and drain. Put the broccoli into a casserole dish that has been sprayed with a non stick cooking spray. Top with shredded chicken and mushrooms.

In a medium bowl, combine the soup, sour cream, cheddar cheese, curry powder, salt and pepper to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken.

Pat down evenly and smooth with a spatula. In a small mixing bowl, stir together the parmesan cheese, bread crumbs and butter and sprinkle over the top.

Bake for about 30-45 minutes, until top is golden brown.

Serve over rice.

This is one of Mike's favorite dishes. For some reason, he always requests this recipe for his birthday dinner. Luca loves it as well. Definitely more of a fall/winter dish.
