2 8-ounce packages of cream cheese, softened.
¾ cup sugar
2 eggs
1 tablespoon lemon juice
1 teaspoon vanilla
12-16 vanilla wafers
1 20-ounce can cherry pie filling

Directions:
Directions:
1. Preheat oven to 350º F.
2. Line a muffin tin with paper cupcake liners.
3. Place one vanilla wafer in bottom of each liner.
4. Combine cream cheese, sugar, eggs, lemon juice, and vanilla, until well blended.
5. Spoon mixture into each vanilla wafer, filling cup liner approximately ⅔ full.
6. Bake for 20-25 minutes; Cool thoroughly.
7. When ready to serve, place a small amount of cherry pie filling on top of miniature cheesecakes.
