10 lemons (organic lemons are better as they avoid the waxy residue)
1 (750 ml) bottle of Everclear
3 1/2 c water
2 1/2 c sugar

Directions:
1. Peel 10 freshly washed lemons. Lemons may be reserved for future use as they won't be used in this recipe.
2. Remove the pith. Use a vegetable peeler, peel the zest from the lemons in long strips. To remove the pith, lay the zest (peel) pith-side up and carefully scrape away as much of the pith with a sharp knife.
3. Combine lemon zest and Everclear in a large, sealable container, at least 2 quarts.
4. Let steep for at least 4 days and up to 4 weeks in a cool, dry place.
5. After the lemon-Everclear mixture is infused to your liking, combine sugar and water in a medium saucepan.
6. Bring to a boil, stirring regularly until the sugar is fully dissolved, approximately 5-10 minutes. Let the syrup cool to room temperature and combine simple syrup and lemon infusion to taste. Cover and let rest overnight.
7. Strain the mixture. Chill in the freezer and serve in a chilled shot glass.
