Cooking spray
1 large onion chopped
2 ½ oz turkey smoked sausage sliced
1 rib celery chopped
1 small green pepper chopped
¼ tea. cayenne pepper
½ tea. dried thyme
1 tea. salt
½ tea. black pepper
2 cloves garlic minced
2 roasted chicken breasts (2cups)
28 oz. canned tomatoes
2 c chicken broth
1 c uncooked white rice

Directions:
Directions:
Spray nonstick pan. Over high heat sauté sausage. Add onion, celery,and green pepper. Sauté until tender. Reduce heat stir in cayenne, thyme, salt, pepper and garlic. Stir in chicken, tomatoes, broth and rice. Bring to a simmer, cover and cook until rice is tender, about 20 minutes.
