1 pound ground beef
2-4 peppers (green, yellow, orange, or red)
1 cup uncooked rice
1 onion, finely chopped
½ cup chopped celery
1 egg
1 teaspoon salt
1 teaspoon pepper
1-1½ cups tomato or vegetable juice
1 small can tomato sauce*

* may use 1 large can diced or pureed tomatoes instead of juice & sauce. Add water if too dry.

1. Preheat oven to 350º F.
2. Grease a 9-inch x 13-inch casserole dish.
3. Clean peppers, discarding seeds and chop into small pieces.
4. Combine in a large bowl, meat, peppers, rice, onions, celery, seasonings, and egg.
5. Add juice and sauce (diced or pureed tomatoes) to meat mixture. If dry add water or juice.
6. Place into the greased casserole dish; Cover with foil.
7. Bake in 350º F. oven for 1-1½ hours, or until done.
