12 oz. Skirt Steak

1/2 oz Cilantro, finely chopped

2 cloves fresh garlic

2 tbsp olive oil

1 thai chili

1 Lemon

½ tbsp Cumin

Directions:
Directions:
1. Mince garlic

2. Mince chili, removing ribs and seeds for less heat.

3. Halve lemon.

4. In a bowl, combine cilantro, cumin, 3 tbsp olive oil, garlic, chili (to taste) and a squeeze of lemon. Season with salt and pepper, more garlic, cumin and lemon to taste.

5. Set chimichurri aside.

6. Heat a drizzle of oil in a large pan over medium-high heat. Season steak all over with salt & pepper. Add to pan and cook to desired doneness - 2-4 minutes per side. Remove from pan and let rest 5 minutes, before thinly slicing against the grain. Serve topped with chimichurri.
