12 oz Yukon Gold Potatoes (about 6 small potatoes)

½ tsp White Truffle Oil

2 tbsp Sour Cream

* Optional splash of milk

*Optional truffle salt

Directions:
Directions:
1. Wash and dry potatoes

2. Peel potatoes, then cut them into ½ inch cubes.

3. Place potatoes in a medium pot with a big pinch of salt and enough water to cover by 1 inch. Bring to a boil and cook until easily pierced by a knife, about 12-15 minutes. Drain and return to pot.

4. Add sour cream and 1/2 to 1 tsp truffle oil (to taste). Mash with a potato masher or fork until smooth. Season to taste with salt and pepper. Add a splash or milk if you want creamier potatoes. Add additional truffle oil in small quantities or truffle salt, if you want a stronger flavor.
