2 1/2 cups flour, PLUS 2 tablespoons
1 teaspoon baking powder
3/4 teaspoon salt
1 cup sugar
1 cup margarine, softened
2 eggs
2 teaspoons vanilla
1 quart of apricot, raspberry, or pineapple filling
1 slightly beaten egg yolk
1 teaspoon water

Preheat oven to 325º.

Sift together flour, baking powder, salt and sugar. Cut in margarine with a pastry blender. Combine eggs and vanilla in a small bowl and beat well. Add to the flour mixture and blend thoroughly. Press dough into a ball. Set aside 1/4 of the dough. Place remaining dough over bottom and sides of a greased 15" x 10" jelly roll pan. Evenly spread with jam filling of your choice. With dough that you have set aside, add 2 tablespoons flour and roll out onto floured surface to 1/8" thick. Cut into narrow strips. Place diagonally on top of filling in both directions. For shiny glaze, combine water and egg yolk; brush on lattice.

Bake for 30-35 minutes or until lightly browned. Let cool and cut into squares.
