1 Head fresh garlic, peeled
1 Loaf sourdough bread (Colombo)
1 Stick butter
½ c. Fresh grated parmesan cheese
½ c. Fresh grated pecorino romano cheese
¼ c. Fresh coursely chopped parsley
Sweet paprika

Directions:
Directions:
Slice bread loaf in half lengthwise across widest portion of bread. Preheat oven to 425º
In a small saucepan over low heat, melt butter being careful not to burn it. Using a press, add garlic to melted butter and stir to combine.
Using a large spoon, spread butter and garlic mixture evenly over the cut side of each half the of bread. Combine cheeses and sprinkle evenly over garlic buttered bread.
Place bread halves face up on a cookie sheet. Bake for 10 min. Remove from oven.
Raise oven rack to top level. Increase temperature to broil.
Place bread halves back into oven and broil for 1 min, or until cheese is brown and bubbling. Watch carefully, do not burn!
Remove from oven and sprinkle with paprika and parsley as desired; allow to cool for 2 minutes.
Slice and serve. Enjoy!

I never had garlic bread until my hubby made this for me when we were dating. I have not had garlic bread as good as this anywhere. Warning, make sure everyone has a slice.
