1 lb country style pork ribs or pork butt cut into 1 inch chucks
1 lb chicken thighs, cut in ½
2 T Vegetable Oil
½ c. Vinegar, apple cider or distilled white
¼ c. Soy sauce
8 cloves Garlic, Smashed lightly with knife and peeled.
2 whole Bay leaves
2 tsp. whole peppercorns
1 cup chicken stock

In a large pot, heat vegetable oil over medium high heat. Add chicken pieces and brown on each side. Remove from pot and reserve. Add pork pieces to pot, lightly brown on both sides. Add reserved chicken, vinegar, soy sauce, smashed garlic, bay leaves, peppercorns and chicken stock to pot. Bring to boil then reduce heat to simmer covered until liquid is almost completely evaporated and meat is tender, about 45 min. Add more stock as needed if meat not yet tender. Remove Bay leaves before serving. Serve over rice.

There are many versions of Filipino Adobo. My mom taught me how to make this recipe. It can be made with all chicken or pork. I don't recommend using boneless chicken, it gets too dry.
