1 pound of ground beef
2cups of water
2 (14½ oz.) cans Chicken Broth
1 cup mild salsa
1 cup dried tomato halves, snipped into thin strips
1 tsp. ground Cumin
¼ cup chopped Cilantro
2 tbsp. lime juice


Garnish toppings:
1 (7oz) can corn kernels (drained)
1 small avocado, peeled, seeded and cut into 1/2 diced pieces
1 cup shredded Monterey Jack cheese
2 cups broken Tortilla chips
sour cream

Directions:
Directions:
1. Brown 1 pound of hamburger; drain grease and set aside

2. In a 2-qt saucepan, mix broth, water, salsa, dried tomatoes, and cumin. Bring to a boil, reduce heat and simmer gently, 8 to 10 minutes, until dried tomatoes are tender.

3. Add cooked ground beef, mix in 2 tbsp of the cilantro and add the lime juice. Simmer for 2-5 more minutes.

4. Ladle hot soup into four bowls, dividing equally. Divide the remaining cilantro, the tortilla chips, corn, avocado and cheese among four bowls. Place out sour cream so each can add to thier individual bowls.
