¾ cup plus 2 tbsp. butter; soften
1½ cup powered sugar, divided
1 tbsp. lemon zest
2 tbsp. fresh lemon juice
1½ cup flour
¼ cup cornstarch
¼ tsp. salt
parchment paper

Directions:
Directions:
1. Using a mixer beat butter on medium speed until creamy. Slowly add ½ cup of the power sugar beat again on medium speed until light and fluffy. Stir in lemon zest and lemon juice, Set aside.

2.In a separate bowl whisk together flour, cornstarch and salt. Once mixed well gradully add flour mixture to butter mixture on low speed until mixed well. Cover and chill in refrigeratorfor 1 hour.

3. Preheatoven to 350º.

4. Using a parchment paper-lined cookie sheet take a 1 in. cookie scoop and drop dough by level spoonfuls 2 in. apart on cookie sheet.

5. Cook for 7 to 10 minutes checking often till done.

6. Toss warm cookies in remaining powered sugar in a small bowl
