4 cups chicken broth
1 cup grits
1/2 tsp. salt
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
2 Tbsp. butter
4 green onions, chopped
1 bell pepper, finely chopped
1 teaspoon minced garlic
1 pound. small shrimp, cooked
1 can Rotel tomatoes, drained

Directions:
Directions:
Bring chicken broth to a boil with salt. Add grits, simmer for 20 min. Stir in cheddar and pepper jack cheeses. Sauté onions, garlic and bell pepper in a skillet with butter. Add to grits mixture. Add cooked shrimp and Rotel tomatoes. Pour into greased dish and bake for 40 minutes at 350º F.

Anyone who knows me, knows that I do not like shrimp and do not cook shrimp but daughter, Jill likes this and thought I needed at least one shrimp recipe. Hope you enjoy it.
