2 Tbsp olive oil
13 ounces hot Italian sausage, casing removed
2 garlic cloves, minced
1 shallot, minced
1 jar tomato sauce (2½ cups)
¼ cup heavy cream
½ cup frozen peas
salt
1 pound bucatini (important!)
½ cup freshly grated parmesan cheese
2 Tbsp shredded basil

Directions:

1. In large saucepan, heat oil. Add sausage and cook over medium-high heat, breaking meat into small pieces until lightly browned. Add minced garlic and shallot. Cook, stirring, until softened. Add tomato sauce.

2. Partially cover pan and cook the tomato sauce over low heat for 30 minutes. Stir in cream and peas and simmer over low heat for another 10 minutes. Season with salt.

3. Meanwhile, cook pasta in boiled salted water until al dente. Drain and return the pasta to the pot. Add the tomato sauce and ¼ cup grated parmesan and toss over low heat for 2 minutes until pasta absorbs some of sauce. Transfer to bowls and top with remaining cheese and shredded basil and serve.
