"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Heat on medium heat sugar, syrup and water in 3 quart sauce pan until sugar dissolves. Stir constantly, and bring to a boil.
Blend in butter.
Using a candy thermometer, stir often after 230º until thermometer reaches 280º.
Add your choice of nuts; you can chop them or leave them whole (I prefer whole).
Stir constantily until candy reaches hard crack stage (305º).
Remove from heat, quickly add soda and mix well.
Pour onto 2 cookie sheets to give room to spread lifting edges with a fork and pulling to desired thickness. Loosen from pans as soon as possible. Hint, I pick up the pan and sslap it
onto the counter (not too hard). This will help it tol break loose, and will also break it into pieces as it does.

Personal Notes:
This is the best Peanut Brittle, but I don't dare make it except for Christmas. Taylor, Shelli's best friend, asked me for the recipe after receiving it for Christmas. I sent it to her and she got it perfected. I don't have to send it to her any more, but we haven't lost touch.
