2 cups water
2 cups peeled chopped potatoes
2 chopped carrots
1 small onion, chopped
1 (4 oz.) can chopped green chilies
1 clove garlic, chopped
1 cube beef boullion
½ tsp. salt
1 pound ground beef, browned, cooked and drained
2½ cups milk, divided
3 T. flour
8 oz. cubed American cheese
¼ - 1 tsp. cayenne pepper
5 slices bacon, cooked and crumbled

In a large saucepan combine first 8 ingredients. Bring to a boil, reduce heat and simer, covered for 15 - 20 minutes or until potatoes are tender. Stir in browned ground beef and 2 cups of milk. Heat through. Combine flour and remaining ½ cup milk until smooth. Gradually pour into soup while stirring. Cook for 2 minutes until thickened. Reduce heat. Stir in cheese until melted. Add cayenne pepper. Top with bacon before serving.

Michael found this recipe in a magazine somewhere during his first semester of college. He ripped out the page and brought it home to me one weekend break, suggesting that I make it. I've been making it ever since. It's just a great creamy soup. Comfort food for those cold fall days.
