1 ripe banana, mashed
2 farm fresh eggs
1/3 cup wheat germ
1/2 tsp baking powder
1 tbsp flax seeds (optional)
1 tsp chia seeds (optional)

Directions:
Directions:
Mash banana and combine with eggs. Add baking soda, salt, and wheat germ, stirring to incorporate. Add flax and chia seeds. Preheat cast iron skillet on medium heat. Reduce heat to medium-low. Butter pan. Spoon out one to two tablespoons mixture. Cook until edges turn crispy/bubbly. Flip and cook until pancakes puff up and bottom is to desired brownness. Serve with Seeds 'n All Black Muscadine Jam or honey.
