4 Qts pickling cucumbers, cut into 1/2 inch slices
2 chopped red peppers
8 medium onions
1/2 C salt
4 C sugar
1 1/2 t temerick
1/2 t ground cloves
1 t celery seed
2 T mustard seed
1 t cayanne pepper
3 C white vinegar
peppercorns and ginger - optional
Mason jars


Directions:
Directions:
In large bowl combine salt, cucumbers, and onions. Toss well.
Cover for 3 hours or overnight with 2 trays of ice.
Once chilled, drain the mixture in a colander and rinse under cold water.
In a saucepan, bring the remainder of ingredients close to a boil. Add the cucumbers and onions
and bring to just a simmer, stirring.
Add red peppers to mixture and heat to scalding but do not boil.
Pour in Mason jars while warm.
