2 pounds broccoli washed and cut into florets
extra virgin olive oil for drizzling
2 crushed garlic cloves
2 Tbsp freshly squeezed lemon juice
1½ tsp lemon zest
⅓ cup toasted pine nuts
⅓ cup freshly grated parmesan cheese
sea salt and freshly ground pepper to taste

Preheat the oven to 400º. Cover 2 sheet pans with parchment paper.

Reserve lemon zest, pine nuts, and grated parmesan cheese. Put all remaining ingredients in a large ziplock bag, seal, and gently shake to coat broccoli. Drizzle olive oil as necessary.

Space the broccoli florets in a single layer on the baking sheets. Roast for 20 to 25 minutes checking periodically. Broccoli should lightly brown, but not burned.

Remove pans from the oven and move broccoli to a large bowl. Toss with lemon zest, pine nuts, and grated parmesan cheese and add more salt and pepper to taste if you wish. Serve immediately.
