1 - 3 pound leg of lamb, boned and cut into about 1 inch cubes

Marinade:
1 cup olive oil
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon ground pepper
2 teaspoons dried oregano
4 garlic cloves, crushed

16 mushrooms
1 large onion, cut into pieces
6 tomatoes or about 16 cherry tomatoes
4 green peppers, quartered

Combine marinade ingredients with cubed lamb and allow to marinate for 4 to 12 hours. (Vegetables may be marinated, or not as you prefer.) Then drain meat and reserve marinade. Begin and end with a mushroom. Then alternately place marinated meat, green pepper, onion, and tomato on skewers. Grill outdoors or broil on foil lined broiler pan for 20 to 30 minutes turning and basting often until kebabs are brown on all sides
