1 c. shortening
1 c. granulated sugar
1 c. brown sugar (packed)
2 eggs
1 tsp. vanilla
2 ½ c. all-purpose flour
1 tsp. soda
1 tsp. salt
1 c. rolled oats
1 c. flaked coconut

Directions:
Directions:
Mix: shortening, sugars, eggs and vanilla until fluffy.

In separate bowl blend: flour, soda and salt thoroughly; stir into shortening mixture.
Blend in rolled oats and coconut. Shape into 2 rolls, each about 2" in diameter. Wrap in waxed paper; refrigerate overnight.

Preheat oven to 400º. Cut in ¼" slices. Place on lightly greased baking sheet. Bake about 12 minutes or until lightly browned.
