Ingredients: large flank steak broccoli mushrooms 1 clove garlic about 2 tablespoons soy sauce about 2 tablespoons oyster sauce salt pepper 2 tablespoons vegetable oil for cooking Sauce: 1/2 cup water 1 teaspoon cornstarch. 1 tablespoon oyster sauce

Directions:Slice the beef across the grain and marinate it in 1 tablespoon soy sauce, salt, pepper and finely chopped garlic. Clean the mushrooms and slice them.Wash broccoli and cut the florets into bite sized pieces. .Set aside. Prepare the sauce mixture by combining 1/2 cup water, 1 teaspoon cornstarch, and 1 teaspoon to 1 tablespoon oyster sauce in a small bowl. Set aside. In a wok or heavy frying pan heat the oil (just enough so the meat does not stick) and stir fry the beef. Add the marinate and a dash or so of oyster sauce when the beef is almost cooked. Stir and remove from pan. It is important not to cook the beef too much at this point or it will be tough. Heat a tablespoon more of oil in the same pan as the beef was cooked in. Add the mushrooms and broccoli and stir fry a couple of minutes. Add about a 1/4 of water and cover. Cook till the broccoli is dark green. Again it is important not to over cook the broccoli at this point or it will become limp. Add the sauce to the broccoli and mushrooms and cook over low heat until the sauce becomes translucent. Stir to prevent sticking. Add cooked meat to the wok. Stir to distribute evenly through the vegetable. Adjust the amount of oyster sauce and soy sauce to taste. Once the meat is hot, serve immediately over cooked rice. |

Notes: As with any stir fry it is helpful to prepare all the ingredients in advance.This dish does not hold well so should be served as soon as it is cooked. The amounts of seasoning, oil, and water depend on the amount of meat and broccoli. Your goal is to use the minimum amount of oil so it will not taste greasy and to end up with cooked but al dente broccoli. For those that like spicy Chinese food you can add a dash or hot sauce at the end of the cooking or every one can season their own at the table
