4 large eggs
½ c sugar
pinch of salt
⅓ c all purpose flour
1 c milk
¼ c melted butter
1 tsp vanilla
1 tsp grated lemon zest
3 large pears peeled, cored, and sliced

Directions:

Generously butter a 9"deep dish glass pie plate or an 8" square pan. In medium bowl whisk eggs, sugar and salt to blend. Whisk in flour. Add milk, butter, vanilla, and lemon zest. Whisk until smooth.

Arrange pears in bottom of prepared plate. Pour custard over pears. Bake at 350º until clafoutis is set in the center and golden on top, about 55 minutes. Shake 1 to 2 tablespoons powdered sugar through a small sieve onto the top and serve.
