Cake Ingredients:
2 eggs, beaten
¾ c oil
1 tsp vanilla
1½ c sugar
2 c flour
2 tsp cinnamon
1 tsp baking soda
Pinch of salt
4 c chopped apples
1 c walnuts, roughly chopped

Icing Ingredients:
1½ T butter
1 c confectioners sugar
1 tsp vanilla
3 oz cream cheese, softened

Directions:
Preheat oven to 350º.

Mix first 8 ingredients well, add apples and walnuts. Bake in a 13x9 inch pan for 45 minutes.

Icing Recipe:
Mix all ingredients well. Spread on cooled cake.

Notes: Always add sugar to cake batter before adding flour. Also you can add up to 5 c of apples if you want more apples in cake.

Doubling the icing is always a good idea...
