1 1/2 cups raw cashews
1 lb broccoli, cut into florets
1 tbsp extra virgin oil
1 small yellow onion, diced
3 cloves garlic, minced
1 tsp salt
1/2 tsp cumin
1/4 tsp ground coriander
Fresh ground pepper, to taste
3 cups vegetable broth
juice of 1/2 lemon

Place the cashews in a bowl and cover with water. Soak for 1-2 hours. Drain and rinse thoroughly.

Steam Broccoli florets until completely tender. Set aside.

Heat the olive oil in large saucepan over medium heat. Add the onion and saute for 3-5 minutes until softened. Add the garlic and cook for another minute. Stir in salt, cumin, coriander, and pepper. Add the broccoli, mix and remove from heat.

Add the soaked cashews with the vegetable broth to immersion blender or food processor to puree. Add the broccoli mixture to blender to blend until smooth. Transfer to large pot. Add Lemon juice and salt and pepper to taste. If desired, add more vegetable broth for a thinner soup. Heat for 5-7 minutes over low heat.
